The private Salon Malmaison

The Salon Malmaison, a private lounge, lies in the very heart of the 5-star hotel Villa Saint-Ange. Close to the city centre of Aix-en-Provence, yet sheltered by a magnificent Provençal garden, the Salon Malmaison is the ideal venue for private meetings, breakfasts, lunches or dinners. Meet with your colleagues for a discreet working breakfast or with your partners for an important business lunch. This private lounge is fully equipped, making it the perfect place in which to hold employee, management or board meetings which require the strictest confidentiality and a truly exclusive service.

This private room, which pays tribute to Empress Joséphine, is beautifully sophisticated and stunningly elegant: high ceilings with mouldings, wall paintings by Zuber, inspired by 18th-century Chinese and oriental décor, a black ebony table, a superb silver candelabra, Limoges porcelain and more. The lounge on the ground floor of the 18th-century villa provides access to the beautiful terrace and the garden.

The Chef
Pierre Gagnaire

Since his birthplace of Saint-Etienne and his first internship with Paul Bocuse, Pierre Gagnaire has written some of the finest pages in French haute gastronomy. Winner of countless awards on every continent and voted ‘World's Greatest Starred Chef’ in 2015, the chef creates a cuisine of emotions that, like a painting, perfectly blends harmony and creativity. He is as enthusiastic as he is patient, as expert as he is modest... The Chef breathes soul into his gastronomic creations. 

‘The notion of teamwork is essential, and I'm very attentive to it. I imagine, I design, I give the impetus and those who surround me every day, translate, build, with their know-how. Because a dish has to be good. And ‘good’ means opening up the field of emotions.

The cuisine at Âma Terra is rooted in Provence. It draws its inspiration from the landscapes between the land and the Mediterranean Sea, using fresh produce carefully selected from local producers. A festival of colours, aromas and flavours.

To the delight of gourmets, sun-drenched fruit and vegetables sit happily alongside aromatic herbs and flowers from Provence, fish alternates with organic lamb, free-range veal and regional cheeses, not forgetting the great classics of French pastry and fruity desserts.
