In the shade of the gardens, within the refined setting of Villa Saint-Ange, the restaurant Âma Terra unveils its new summer menu, available from Friday, June 21.
A cuisine inspired by seasonal ingredients, elevated by the chef’s expertise: freshness, balance, and authenticity guide each plate. Delicate starters, sun-drenched main courses, and light, airy desserts… a gourmet interlude designed to capture the essence of summer.
Seasonal Menu
To begin
Rockfish soup, red mullet fillet cooked skin-side down,
seasonal vegetables by Bruno Cayron, Corsican tomme cheese rouille toast.
Soft-boiled egg and nori pastry,
sea urchin tongues in a delicate mousse, ginger-infused broth.
Thin carpaccio of Mediterranean bluefin tuna belly,
seasoned with black lemon and citron,
zucchini flowers from the region in tempura.
Pongo green beans from Le Puy-Sainte-Réparade, old Barolo vinaigrette,
spiced avocado purée, Vahé bottarga foam, panisse toast soldiers.
Main courses
Sautéed squid slice and baby artichokes with garlic and parsley,
Camargue rice with confit red peppers.
Plancha-seared dentex from our coasts, Espelette pepper butter,
Provençal vegetable bohémienne, basil purée, and Lebanese hummus.
Milk-fed lamb from La Roque-d’Anthéron, cooked in multiple ways,
chanterelles with Vin Jaune, eggplant caviar, thyme-infused jus.
Salt-crusted veal chop,
duck fat potato press, sautéed summer vegetables.

Tahitian vanilla diplomat cream.
