Lunches & Dinners
Appetizer
Caesar's beef tartare and Mediterranean red tuna,
rocket and crunchy radish.
Glazed tomato soup: stracciatella, fennel stalks, Cremona mustard,
Parmesan shavings, frosted raspberries, a slice of roasted tomato.
Bouchot mussel marinière and mackerel saupiquet,
oyster glaze, green vegetables.
Red mullet terrine with saffron, artichokes with pine nuts ;
Rouille sauce.
Dishes
Squid rings with basil, Stiletto aubergine.
Mediterranean fish of the day poached in CastelaS olive oil.
Virgin vegetables, creamy cod brandade.
Rack of farmhouse pig roasted with sage.
A thick slice, fig and beetroot marmalade
with Banyuls vinegar, spinach shoots.
New potatoes with smoked bacon.
Crépinette of saddle of lamb with garden herbs,
fregola, burst cherry tomatoes, chops of Swiss chard.
Desserts
Traditional calisson with candied melon,
roasted apricot coulis with rosemary,
white sorbet with olive oil.
Lemon panna-cotta, Polignac almonds, raspberry jam.
Muscovado tuile.
All blackcurrant: burst grains, sorbet, mousseline, wind crystal,
joconde cubes soaked in liqueur.
Mirabelle macaroonade with kirsch, praline parfait.
Manjari chocolate mousse, Pamplona water,
ice cream and chocolate leaves, coffee veil.
