Restaurant Âma Terra
From dinner on Thursday 12 October 2023, Villa Saint-Ange and its restaurant Âma Terra invite you to discover our Autumn Menu, designed by the famous chef Pierre Gagnaire.
This menu will immerse you in an unforgettable gastronomic experience in the heart of Provence. The flavours of autumn take centre stage, with exquisite dishes featuring local and seasonal produce.
Our Autumn menu is a tribute to the culinary richness of the region, and an invitation to share moments of pleasure and discovery in the warm, elegant atmosphere of Villa Saint-Ange.
Summer menu

Lunches & Dinners
To begin
Mallard pâté en croûte and duck foie gras.
Chanterelle pickles. Lamb's lettuce and celeriac salad.
Porcini mushrooms: a velouté, the heads roasted, sliced raw.
Croutons of sandwich bread with olive oil, aubergine caviar with dates.
Cévennes sweet onion jelly: a fondue with blond grapes,
67° egg covered with a Salers cream.
Seasonal Provençal stuffing. Amandine potatoes with truffles.
Cabbage stuffed with Camargue rice. Caillette of chard.
Then
Fricassee of red mullet with saffron, grilled fennel and rattes, creamy rouille.
Tandoori Saint-Pierre white fish, Bouchot mussels, razor clams, Paimpol cocos.
Oyster and broccoli ice cream.
Rack of pork (Bocage Bourbonnais) rubbed with sage, roasted/grilled;
pan-fried porcini mushrooms à la Bordelaise.
Waffle apples, crispy Iberian palette.
Breast of pheasant roasted on a chest - kale fondue, caramelised salsify.
Chestnut purée, celery sticks (served in a cup).
Braised/roasted shoulder of lamb from La Roque d'Anthéron - chick peas
chickpeas, red peppers and soft apricots, paprika almonds.
A dash of hazelnut oil.
Grilled piece of the moment, rocket salad.
Pieds paquet marseillais.
Cheeses
A selection of cheeses matured by Maison Lemarié: €25 per person.
Desserts
Apple tart with Pierre Gagnaire ice cream.
Tahaa vanilla ice cream with caramelised walnuts;
decooked caramel with coffee. Belle-Hélène pear.
Lemon panna-cotta with Amarelli ice cream.
Gavotte muscovado.
Absinthe white sorbet, pink grapefruit marmalade,
fennel and crispy Nyons black olives.
Dacquoise with CastelaS olive oil.
